This is a great passed down Jamaican recipe from a friend. This recipe goes well with cold slaw and a cold beer!

Ingredients
  • 2 cups of potatoes, peeled and finely shredded
  • salt and pepper to taste
  • 2 Tbsp. of butter
  • 2 eggs
  • a dash or 2 of Tobasco or any other hot sauce
  • 1 Tbsp. chopped parsley
  • 3/4 - 1 lb. of salted cod, soaked overnight, drained, rinsed, boiled then flaked
  • 1/2 cup seasoned bread crumbs
  • 1 tsp. onion powder
  • 1 Tbsp. Parmesan cheese
  • vegetable oil

Directions
  1. Heat approximately 2-3 inches of vegetable oil in a deep pan.
  2. Combine all ingredients together.
  3. Roll mixture into small balls.
  4. Fry them in oil until nicely browned.
  5. Remove and drain on paper towel.
  6. Serve with homemade tartar sauce.
  7. Recipe for Tartar Sauce
  8. 1-1/2 cups mayonnaise
  9. 1 Tbsp. relish (not yellow mustard relish)
  10. 1/2 tsp. lemon juice
  11. a tiny dash of Tobasco sauce
  12. Mix everything together with a fork and it's done.

I don't have salted cod but I'll bet any meaty, white fish will work. A keeper.
