Ingredients

10 ounces crab meat, make certain you pull out any hard membrane

1-1/2 cups soft/fresh bread crumbs

1 egg, beaten

2 Tbsp. cocktail sauce

2 Tbsps. mayonnaise

2 Tbsps. finely chopped green onion

1/2 tsp. onion powder

2 tsps. chopped fresh parsley, or 1/2 teaspoon dried

a pinch of cayenne pepper or a dash of Tobasco sauce

a pinch of black pepper

1 cup crushed potato chips

*I like Sour Cream and Onion

cocktail sauce for serving

Directions

In a large bowl, combine crab meat, bread crumbs, beaten egg, 2 tablespoons cocktail sauce, mayonnaise, green onion, onion powder, parsley, and pepper.

Mix well.

Cover and chill for 1 hour.

Form crab mixture into balls, using rounded teaspoon for each.

Roll balls in crushed potato chips.

Place on a lightly greased baking sheet.

Bake in a preheated 425° oven for 10 to 12 minutes or until hot and lightly browned.

*I have deep fried these as well but if you're looking to reduce the calories, baked is good. If you deep fry them, omit rolling them in potato chips and include the crushed potato chips as an ingredient.

Serve with cocktail sauce.

Makes about 36 appetizers.
