This is a great quick loaf and handy to have on hand.

Ingredients
  • 2 cups all-purpose flour
  • 1 Tbsp. granulated sugar
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup (1/2 stick) cold butter or margarine
  • 2 cups shredded sharp cheddar or Monterey Jack
  • (for a spicy bread use a peppery flavored cheese)
  • 1 cup milk
  • 1 egg, beaten
  • Optional: 1 tsp. seasoned pepper blend
  • *Sometimes I have added sauteed onions to this loaf and the flavor is oh so good.

Directions
  1. Preheat oven to 400 degrees F.
  2. Mix dry ingredients.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Blend in cheese.
  5. Add combined milk and egg.
  6. Stir until moistened.
  7. Spoon the batter into a greased and floured 9 x 5 inch loaf pan.
  8. Bake for 45 minutes.
  9. Cool in pan 5 minutes.
  10. Remove from pan and cool on wire rack.
