oranged ruffed grouse

- olive oil shopping list
- 4 ruffed grouse breasts w/o breast bone, or four chicken breasts shopping list
- one small jar of orange marmalade.. shopping list
- one half stick of butter shopping list
How to make it
- heat the olive oil in skillet just large enough to accomodate the grouse breasts.. it should be crowded in the skillet and lightly oiled
- cook slowly and bring the breasts to browned finish. they need to be completely cooked.
- add the half stick of butter -let it melt and just start to bubble
- now smother the breasts with orange marmalade...
- increase the heat until the butter, oil and marmalade starts to bubble,thicken and congeal. keep everything in motion in the skillet
- dont let it rest until its all done then remove it from the heat

My dad was a great outdoors men and we used to have Pheasant prepared this way. I miss him and the pheasant. Thanks for sharing this!
