Better than a bacon and egg McMuffin, this sandwich-meets-french-toast jaffle, toastie, breville (whatever you like to call them) is sure to impress.

Ingredients
  • 2 eggs
  • 4 slices of bread
  • 2 slices of ham
  • 2 slices of cheddar, tasty or Swiss cheese
  • 2 tbs butter
  • salt and pepper

Directions
  1. Spread some of the butter over the bottom of a jaffle iron
  2. Spread the rest of the butter on 1 side of 2 pieces of bread
  3. Preheat the jaffle iron
  4. Crack 1 egg into each side of the iron (break the yoke over the centre split)
  5. Put the un-buttered piece of bread on top of the egg
  6. Load ham and cheese onto the bread - add salt and pepper to taste
  7. Put the last piece of bread butter-side up
  8. Cook for 5 minutes (don't peek!) once the egg is cooked it will come out easily

Alterations


I've heard a rumour that someone has done this same recipe with 2 slices of cheese on the inside and BACON on the outside of the top bread! I'll let you know when I've tried it out...
