Ingredients

2 eggs

4 slices of bread

2 slices of ham

2 slices of cheddar, tasty or Swiss cheese

2 tbs butter

salt and pepper

Directions

Spread some of the butter over the bottom of a jaffle iron

Spread the rest of the butter on 1 side of 2 pieces of bread

Preheat the jaffle iron

Crack 1 egg into each side of the iron (break the yoke over the centre split)

Put the un-buttered piece of bread on top of the egg

Load ham and cheese onto the bread - add salt and pepper to taste

Put the last piece of bread butter-side up

Cook for 5 minutes (don't peek!) once the egg is cooked it will come out easily

I've heard a rumour that someone has done this same recipe with 2 slices of cheese on the inside and BACON on the outside of the top bread! I'll let you know when I've tried it out...
