These are perfect any time of year. I especially like them in the Spring and Summer months and they're perfect for tea time.

Ingredients
  • 2 (8 ounce) blocks cream cheese, softened
  • 3/4 cup sugar
  • 1-1/2 teaspoons vanilla extract
  • 1 to 2 Tablespoons freshly squeezed lemon juice
  • 2 eggs
  • vanilla wafers (one for each cupcake)
  • 1 can any fruit and pie filling
  • *I like using cherries.
  • If you would rather use graham wafers as a base.
  • Crust:
  • 1 cup graham cracker crumbs
  • 2 Tbsp. brown sugar
  • 1/3 stick melted butter
  • In a medium bowl, mix graham cracker crumbs, sugar and butter with a fork until well combined.

Directions
  1. Combine cream cheese, sugar, eggs, and vanilla.
  2. *The original recipe does not call for lemon but I like to add
  3. approximately 1 to 2 tablespoon freshly squeezed lemon juice. If I do add lemon juice, I like to top these with either lemon curd or lemon pudding and pie filling.
  4. Beat until smooth.
  5. Place one vanilla wafer on the bottom of each cupcake liner.
  6. Fill with cheese mixture 3/4 full.
  7. Bake at 375 degrees for about 20 minutes.
  8. Top with a spoonful of pie filling and chill.
  9. Note: You can also top these with mini chocolate chips or add before baking to make less of a mess.

Lemon curd on the top is the best for those one I think...You are right about adding the lemon juice....It has to be somehow sour.


Looks like I'm going to be very busy this week preparing for my up-and-coming weekend company. I really like ahmed1's idea with the lemon curd topping but I also like the cherries. Well, I'll decide when the time comes. Thanks so much for this 5 recipe.
