Ingredients

2 Cups all-purpose flour

1/2 teaspoon baking soda

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons cinnamon

1 1/2 Cups quick oats

2 packages instant oatmeal with maple/brown sugar

3/4 Cup chopped nuts

1 Cup plus 2 Tablespoons shortening

2 1/4 Cups granulated sugar

3 Tablespoons white corn syrup

1 teaspoon vanilla extract

2 eggs

Directions

Preheat oven to 350 degrees. Cream shortening. Add eggs, sugar and corn syrup. Add the other dry ingredients and mix until blended. Spray a 9X13 square cake pan (with sides)with a nonstick cooking spray. Bake at 350 degrees F for 15 to 20 minutes. Oven temperatures vary. These chewy bars rise up in the pan and fall. When cool, cut into bars. Yummy, chewy goodness!

If you don't have instant oatmeal, increase plain oats 1/2 Cup. These are made every weekend at my house and they are given away because they talk to ya! Yoo Hoo....we're over here! Have some!!

Alterations

I baked more of these the other day...I set the timer for 15 minutes then the buzzer went off. I turned off the stove and left the pan in the oven for a little while. They turn out different every time but they always taste SO good!! I got my knife and cut into bars while they were still in the pan. They stayed in the oven after I turned the oven off and didn't get hard at all.
