Oat French Loaves Recipe
This bread comes out dense yet soft with just the right amount of chew. Perfect for a cheese plate.

Ingredients
  • 2 packs of activated bread yeast
  • 1/2c lukewarm water (anything over 130 and you will kill your yeast)
  • 2 c warm water
  • 1 1/2 tbsp salt
  • pinch of sugar
  • 2 1/2 c quick cook oats (grind them to an almost flour in the food processor or blender)
  • 6 c all purpose flour
  • 1 c flour
  • 1 c quick cook oats
  • egg wash,
  • 1 egg plus 1 tbsp water

Directions
  1. Soften the yeast in 1/2 c water and pinch of sugar for 5-10 minutes
  2. add the rest of the water and the salt.
  3. add the oat flour first, then mix in the wheat flour
  4. roll out onto a floured surface and knead in the rest of the flour and oats
  5. place in a greased bowl, turning the bread ball over to grease all sides and cover.
  6. Let this rise in the warmest place in your house until doubled (45 min)
  7. punch dough down and let it double again again (30 min)
  8. at this point you can shape your loaves any way you like. What worked very well for me was to divide the dough in half and twist the loaves a few times so that I had spiraled baguettes
  9. let sit for another 10 minutes and bake 20 minutes on a humid, 375 degree oven
  10. pull is out and brush on an egg wash, stick it back in for another 20 minutes.
  11. Enjoy!
