Firecracker Carrots Recipe
This is really easy to make. Its a healthy snack (great replacement for chips), and its HOT!

Ingredients
  • 1/2 lb mini carrots (cut and peeled)
  • 1 cup water
  • 1 cup sugar
  • 1 1/2 cup cider vigegar
  • 1 teaspoon onion powder
  • 1/2 teaspoon mustard seeds
  • 1 1/2 teaspoon kosher salt
  • 1 teaspoon red pepper flakes
  • 2 dried chilies
  • Pickle Jar

Directions
  1. Go out and buy a large jar of pickles from the store. Eat all the pickles and SAVE the jar.
  2. Fill the jar up 3/4 with the mini carrots.
  3. In a pot, bring all the other ingredients (except the 2 dried chilies) to a boil.
  4. Boil for 4 solid minutes.
  5. Slowly and safely pour the pickling liquid into the jar.
  6. Allow it to cool.
  7. Put the lid in the Jar.
  8. Put the Jar in the fridge for 5 - 7 days.
  9. Eat! (Carrots will be good for 3 - 4 more weeks, but you'll eat them first).

Could you use baby carrots instead of mini carrots?


Yes sday5, I use baby carrots half the time, it really all depends on what you want. I've even used 'carrot chips' which they sell pre-cut.
