How to make it

  • Go out and buy a large jar of pickles from the store. Eat all the pickles and SAVE the jar.
  • Fill the jar up 3/4 with the mini carrots. Put the two dried chilies in the jar.
  • In a pot, bring all the other ingredients to a boil.
  • Boil for 4 solid minutes.
  • Slowly and safely pour the pickling liquid into the jar.
  • Allow it to cool.
  • Put the lid in the Jar.
  • Put the Jar in the fridge for 5 - 7 days.
  • Eat! (Carrots will be good for 3 - 4 more weeks, but you'll eat them first).

    I changed out the dried chiles for a couple of habanero chiles and added about a clove of minced garlic. I call them Fire Bomb carrots and my family loves them.

    I also use the carrot chips from the grocery store. Its easy and the chips are more uniform in size.

    hey do the carrots that dont get boiled stay hard and crunchy like?
    im gonna try this i think.....seeing as my mum has a weird obsession with buying carrots just now....we have like 5 bags in our fridge..just cause they were on special.

    Yes sday5, I use baby carrots half the time, it really all depends on what you want. I've even used 'carrot chips' which they sell pre-cut.
