Ingredients
  • 1-1/2 Tablespoons unsalted butter
  • 2 medium garlic cloves, minced
  • 1 Tablespoon fine-chopped shallots
  • 1/4 teaspoon crushed dried red pepper flakes, or to taste
  • 8 ounces cream cheese, at room temperature
  • 3/4 cup sour cream
  • 1/3 cup plus 2 Tablespoons heavy cream
  • 3/4 cup fresh-grated parmesan cheese
  • 2/3 cup shredded provolone cheese
  • 1 (10-ounce) package frozen spinach, defrosted and squeezed to remove moisture
  • Suggested Toppings For Serving:
  • 2 Tbsp. crumbled blue cheese
  • 2 Tbsp. shredded provolone cheese
  • 2 Tbsp. chopped red onions
  • 2 Tbsp. sour cream
  • 1 Tbsp. real bacon bits (Hormel brand suggested)

Directions
  1. Note: This recipe calls for heating it in the microwave but I prefer heating it in the oven at 350 degrees for 30 minutes.
  2. To make dip:
  3. In a heavy skillet or saute pan, melt the butter over medium heat.
  4. Saute the garlic, shallots and red pepper flakes about 2 minutes or until soft and fragrant.
  5. Add the softened cream cheese and sour cream; stir until no lumps remain.
  6. Slowly incorporate the heavy cream.
  7. Remove from the heat and fold in the parmesan and provolone cheeses.
  8. Transfer to a large mixing bowl and mix well. Fold in the spinach, mixing well.
  9. Place the dip in microwave safe serving bowl or bowls.
  10. To Serve:
  11. Cover it with a paper towel.
  12. If you plan to use it within a short time, keep at room temperature before serving.
  13. If making it ahead, refrigerate it and rewarm it to serve.
  14. Chilled dip will be firm so remove from the refrigerator 30 minutes or more before serving.
  15. Cover with a paper towel and heat in the microwave.
  16. It should be warm to the touch.
  17. Time will depend on size of dish. Garnish with any or a combination of the suggested toppings.
  18. Makes about 3 cups.
  19. Per (2-tablespoons) serving (without suggested toppings): 100 calories, 78 percent calories from fat, 9 grams total fat, 5 grams saturated fat, 28 milligrams cholesterol, 1 gram carbohydrates, .16 gram total fiber, .49 gram total sugars, 1 gram net carbs, 4 grams protein, 131 milligrams sodium.
