My family and I love Chili and this is a great recipe. I like to serve this with a mixed green salad and a large loaf of French or Italian bread and garlic butter. It's just sooooo darn good! Love the crockpot from Target!

Ingredients
  • 2 lbs. ground beef (medium or lean)
  • 1 lb. ground pork or sausage meat
  • *I find there is more flavor in medium ground beef
  • 2 large onions, chopped
  • 2 celery ribs, chopped
  • 1 large green pepper, coarsely chopped into chunks
  • 3-4 cloves garlic, finely chopped or minced
  • 1 can (28 ounces) diced tomatoes with juice - do not drain
  • 1 can (15 ounces) tomato sauce
  • 1 cup good quality tomato juice ie. V8 or Heinz
  • 2 Tablespoons chili powder
  • 1 teaspoon garlic and onion powder
  • 1-1/2 teaspoons ground cumin
  • *oops, I almost forgot - a pinch of brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon pepper, freshly ground
  • 1 can (15 or 16 ounces) Kidney beans, rinsed and drained
  • 1 can (15 or 16 ounces) Romano beans, rinsed and drained

Directions
  1. Cook beef and pork over medium heat, stirring occasionally, until brown.
  2. Drain all fat.
  3. Mix beef, pork and remaining ingredients except beans in 3-1/2 to 6-quart crock pot or slow cooker.
  4. Cover and cook on low heat setting 6 to 8 hours (for high heat setting, 3 to 4 hours) or until onion, celery and green pepper are tender.
  5. Stir in rinsed and drained beans.
  6. Set heat to high and cook 30 minutes or until slightly thickened.
  7. This smells so delicious.
  8. Makes approximately 6 - 8 servings
  9. I sometimes double this recipe, depending on the crowd.
