I love this cake during those cold and damp Autumn or Winter months.

Ingredients
  • 1/2 cup butter
  • 1-1/2 cups flour
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup water
  • 1 - 8 ounce can sauerkraut, drained, rinsed and finely chopped

Directions
  1. In a large bowl cream butter and sugar until light.
  2. Beat in eggs, one at a time and add vanilla.
  3. Sift together flour, baking powder, soda, salt and cocoa powder and add to creamed mixture alternating with water, beating after each addition.
  4. Stir in drained sauerkraut.
  5. Spoon into a greased and floured 13 x 9 inch pan.
  6. Bake at 350 degrees for 35-40 mintues.
  7. Cool in pan and serve with freshly whipped cream or ice cream.
  8. Serves 10 - 12
