GUY LAN NGOW This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ritchie Estate in Balch Springs, Texas in 1984.

Ingredients
  • 1/2 pound beef
  • 1 pound fresh broccoli
  • 1 wedge ginger size of quarter
  • 2 teaspoons cornstarch mixed with 2 teaspoons water
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 3/4 cup chicken broth
  • Beef Marinade:
  • 1 teaspoon cornstarch
  • 1 teaspoon light soy sauce
  • 2 teaspoons sherry
  • 1/4 teaspoon sugar
  • 1/4 teaspoon vegetable oil

Directions
  1. Slice beef and add marinade.
  2. Wash broccoli and peel off tough outer layer.
  3. Slice broccoli stems diagonally into paper thin slices and divide flowerets into 4 small sections.
  4. Smash wedge of ginger.
  5. Mix cornstarch, water and pepper then set aside.
  6. Using a high flame heat pan and add 1 tablespoon oil, salt and ginger.
  7. Add broccoli and stir then add stock and cover 6 minutes stirring occasionally.
  8. Uncover and stir then remove and set aside.
  9. Heat pan again and add remaining oil.
  10. When pan is red hot add beef and flatten against sides of pan.
  11. Stir fry 45 seconds then add broccoli and stir in cornstarch mixture.
  12. Cook until gravy thickens then serve immediately.
