Mexican Style Southern Spoonbread

- 2 1/2 cps milk shopping list
- 1 1/2 cp water shopping list
- 1 1/2 cp yellow stone ground corn meal shopping list
- 1 tsp salt shopping list
- 4 tbs butter shopping list
- 4 eggs shopping list
- 1 can stewed tomatoes shopping list
- 1/2 cp salsa shopping list
- 1 sall can chopped mild chillies shopping list
- 2 cps any kind of cheese grated shopping list
How to make it
- grease three quart casserole dish with butter
- mix tomatoes, salsa and chilis and pour into dish
- spread grated cheese over tomatoe mixture
- In heavy sauce pan combine milk, water, cornmeal, salt and butter
- cook stiring constantly til thick and creamy.
- In seperate bowl beat eggs til thick and lemony
- Pour part of cornmeal mixture into egg mixture and beat well
- add remaining cornmeal mixture again beat well
- Pour on top of cheese in casserole dish
- bake in 350 degree oven abour 40 minutes or until knife inserted in center comes out clean
- Serve with a large green salad. very good
- Note: If you are a big meat lover you can brown a pound of lean hamburger or sausage and add that layer before the cheese, Italion sausage works well with this.
