Spezzatino Di Pollo

- 2 cloves garlic, chopped shopping list
- 4 tablespoons olive oil shopping list
- flour shopping list
- salt shopping list
- pepper shopping list
- 1 sprig rosemary shopping list
- 10 chicken thighs, rinsed and patted dry shopping list
- 8 ounces fresh mushrooms, sliced shopping list
- 12 ounces dark beer such as Killian's shopping list
- 1/2 cup oil cured black olives shopping list
- 1/2 cup assorted olives, green, Calamata, etc. shopping list
How to make it
- Heat Olive oil over medium-high heat in large Saute pan
- Coat Chicken with flour
- Add Garlic to oil when hot, cook 30 seconds
- Add Chicken, fry till golden brown then turn and brown second side
- Season with salt and pepper to taste
- Add Olives, Mushrooms, Rosemary and Beer.
- Turn heat to low and simmer with pan covered for about two hours.
- Sauce should reduce to a nice gravy consistency.
- Additional beer can be added if sauce becomes too thick.
