Savory Italian Chicken Stew goes well with Mushroom Risotto or served over plain Papperadelle. Asparagus with Bernaise sauce goes well as a side.

Ingredients
  • 2 cloves Garlic, chopped
  • 4 tablespoons Olive Oil
  • flour
  • salt
  • pepper
  • 1 sprig Rosemary
  • 10 Chicken thighs, rinsed and patted dry
  • 8 ounces fresh mushrooms, sliced
  • 12 ounces dark beer such as Killian's
  • 1/2 cup oil cured black olives
  • 1/2 cup assorted olives, green, Calamata, etc.

Directions
  1. Heat Olive oil over medium-high heat in large Saute pan
  2. Coat Chicken with flour
  3. Add Garlic to oil when hot, cook 30 seconds
  4. Add Chicken, fry till golden brown then turn and brown second side
  5. Season with salt and pepper to taste
  6. Add Olives, Mushrooms, Rosemary and Beer.
  7. Turn heat to low and simmer with pan covered for about two hours.
  8. Sauce should reduce to a nice gravy consistency.
  9. Additional beer can be added if sauce becomes too thick.
