This is a great casserole recipe that uses up leftover turkey.

Ingredients
  • 3-1/2 cups turkey, leftover from Thanksgiving or Christmas, cooked and cubed
  • 1 celery rib, sliced
  • 1/2 onion, finely chopped
  • 2 Tbsp. lemon juice
  • 1/4 tsp. pepper
  • 1 can soup (cream of chicken, mushroom, onion or celery)
  • 3/4 cup evaporated milk
  • 1 cup mayonnaise
  • 1/4 cup water
  • 2 hard boiled eggs, chopped
  • 1/2 cup almonds, chopped (optional)
  • Chinese noodles
  • Parsley to garnish

Directions
  1. Blend soup, milk and water.
  2. If I add almonds I like to lightly toast them first.
  3. Add nuts.
  4. Then add other ingredients.
  5. Pour into 9 x 11 inch pan.
  6. Sprinkle with Chinese noodles or French's fried onions
  7. Bake at 350 degrees for 25 - 30 minutes.

I love turkey and this recipe will do nicely during the late fall and early winter months. I'm giving it a 5 and I think it is very deserving.
