How to make it

  • Mix all dry ingredients in a bowl and make a well in the middle. Add the egg and half of the milk. Mix to a loose batter. Whisk in the remaining milk gradually and add the oil.
  • Heat a frying pan and lightly grease (if the pan is non-stick, never mind!). Use a tablespoon and make small "cakes" in the pan. Turn over when batter is dry on top and the opposite side is golden. Fry the other side until golden as well.
  • Put the scones in a folded clean kitchen towel until all are fried, this way the first ones won't dry while the others are still frying.
  • Serve either as they are or with butter and cheese or marmalade with a nice beverage. Makes 12-16 depending on how big you make them.
