Ingredients
- 1 pound tomatoes
- 1 large onion
- 2 slices lean bacon (MUST be lean; I use Canadian bacon)
- 4 large slices whole wheat bread
- 1 TBSP chopped parsley
- 1 1/2 tsps chopped fresh basil
- 3 TBSPS butter
- Salt and freahly ground black pepper, to taste
- Sugar, for sprinkling, to taste
Directions
- Peel and coarsely chopped the onion. Chop the bacon into small pieces. Put the onion and bacon through the fine blade of the meat grinder (or, use your food processor).
- Remove the crust and crumble the bread into the bacon and onion mixture. Add the herbs.
- Peel and thinly slice the tomatoes.
- Preheat the oven to 400°F (200°C). Set an oven rack in the top third of your oven. Butter a shallow, ovenproof dish.
- Put a layer of the bacon mixture in the bottom of the prepared dish. Cover with a layer of tomatoes, and season with salt, pepper, and a little sugar. Repeat these layers until all the ingredients are used up, finishing with a layer of the bacon mixture.
- Dot with butter and bake near the top of the preheated overn for 30 - 35 minutes or until brown and bubbling. Serve at once.
