Ingredients
  • 4 large, frim tomatoes
  • Salt and freshly ground black pepper, to taste
  • 1 clove garlic, peeled and finely minced
  • 4 eggs
  • 2 tsps tomato purée (tomato paste)
  • 2 TBSPS heavy cream (whipping cream, 35% MF)
  • 1 TBSP freshly grated Parmesan cheese
  • 4 slices bread (your favourite type)
  • 2 TBSPS unsalted butter
  • 2 tsps olive oil

Directions
  1. Wash the tomatoes, wipe them dry, and slice off the tops with a sharp knife. Carefully scoop out the pulp with a spoon and sprinkle the inside of the shells with salt and garlic. Turn the tomato shells upside down to drain for 30 minutes.
  2. Preheat the oven to 350°F (175°C). Place the oven rack in the top third of the oven.
  3. Break an egg carefully into each tomato shell, keeping back as much as possible of the white. (NOTE: If the tomatoes are large enough, I put the whole egg in; if they are smaller, I place the yolk in with only a bit of the white....it's up to you.) Season with salt and pepper.
  4. Blend the tomato purée with the cream and spoon gently over the eggs. Sprinkle each with a little grated Parmesan cheese.
  5. Put the tomatoes in an ovenproof dish and bake near the top of the preheated oven for 15 - 20 minutes or until the eggs have just set.
  6. Meanwhile, cut the bread into rounds with a fluted pastry cutter (or, use a very large, round glass). Heat the butter and oil in a pan over medium-high heat and sauté the bread until crisp and golden brown on both sides. (Make sure the oil-butter is hot enough, but not burning, before you add the bread or it will absorb too much of the oils.)
  7. As soon as the eggs are set, arrange 1 tomatoe on each round of bread and serve at once.

Wow, I may lick the screen. My grand-mother (the Greek one) never served a meal without a stuffed tomato and green pepper on the table. I like this take on it, very elegant. I might sprinkle some oregano or tarragon on top. Mmmmm.
