7-up Pound Cake Recipe

This is a recipe that has been bounced around in my family for quite some time. I hope I haven't duplicated it here and if I have I apologize.

Ingredients
- 1/2 cup shortening
- 1 cup butter, at room tempurature
- 3 cups sugar
- 5 eggs
- 3 cups flour
- *Spoon flour lightly into measuring cup and level off. Do not pack.
- 7 oz. 7-Up / Sprite
- 1 tsp. almond extract
- 2 tsp. vanilla extract
- 1 tsp. lemon juice
- I make a thin lemon icing that I drizzle over top.
Directions
- Preheat oven to 325 degrees F.
- Grease and flour a bundt pan.
- Cream first 3 ingredients in a large bowl with electric beaters on medium speed.
- Add eggs, one at a time, beating thoroughly after each one.
- Add flour and 7-Up / Sprite alternately.
- Stir in flavorings.
- Spoon batter into prepared bundt pan and bake for 1 hour and 15 minutes.
- Cake is done when toothpick inserted into it, comes out clean with maybe a crumb or two on it.
- Cool in pan for 15 minutes.
- Invert onto cake plate.
- Make cake a day or two before you want to serve it.
- Store in an airtight container.

This is my daughter's favorite cake of all! I had baked one probably 4 years ago when she was in elementary school. Those little girls still talk about that cake! Jett

I make this cake too. I usually use Sprite, and it's a great pound cake.
