Ingredients

6 Tbsp. butter

1-1/4-cups sugar

2 eggs

1 tsp. vanilla

1-1/2 cups all-purpose flour

1-1/4 tsp. baking powder

1/2 tsp. salt

1/2 cup milk

1/2 cup chopped pecans or walnuts

peel of 1 lemon, grated

juice of 1 lemon

Directions

Preheat oven to 325°.

I grease and lightly flour the loaf pan although the recipe doesn't call for it.

Cream butter and 1 cup of sugar in a mixing bowl and whip until light and fluffy.

Beat in eggs and vanilla.

With mixer on high, add flour, baking powder, and salt to the creamed mixture alternately adding your milk.

Blend in by hand, pecans and lemon peel.

Bake for 50 minutes to 1 hour or until wooden toothpick inserted in center comes out clean.

Immediately after removing from oven, poke holes all over the top of the loaf with a long skewer.

Combine lemon juice and remaining 1/4-cup sugar and pour over loaf.

Cool in pan for twenty minutes.

Gently run a knife around edge of the loaf while still in loaf pan to loosen any areas that may be stuck and turn loaf out onto a wire rack to cool.

Serves 6

Lemon is good for you so I am told.
I like the way you pour the lemon juice and sugar over the top.
Decadent looking when you place a paper pattern over loaf before sprinkling powdered sugar.
