Goes with crusty bread and white wine, i love it , can increase or decrease recipe as required.. just have fun

Ingredients
  • Chicken breast diced or sliced/cubed ( 3 )
  • Long grain rice approx 3 cups
  • Onions,diced, approx 3
  • Carrots, sliced, 4
  • Chicken or veg stock, approx 2 pints
  • Water approx 1 pint
  • Single cream
  • White wine.
  • Dash of olive oil.

Directions
  1. Chop/ Dice all the onions and carrots, put them in a large pot with a dash of olive oil and fry until slightly soft.
  2. When soft, add 1 pint of chicken stock to the pan. Add about 3 cups of the rice and if its quite dry, add some more water.
  3. keep adding water (it should look rather wet and soupy) if it is dry.
  4. After approx 30 minutes, taste. Add pepper to your strength liking and a little teaspoon of mustard if its a bit bland. ( this depends on ur veg)
  5. Add a dash of cream, and a dash of white wine. Stir and taste.
  6. Simmer until thick and creamy, add more cream or wine.
  7. Eat!!
