Ultra Lemony Bars Recipe
Even people who don't like lemon like these squares. The somewhat sweet shortbread base is the perfect complement to the tartness of the lemon topping. A sprinkle of icing sugar adds that finishing touch.

  • Base:
  • ½ c. butter, softened
  • 1 c. sugar
  • 2 c. flour
  • pinch salt
  • Preheat oven to 350 degrees F. Beat butter with sugar until creamy. Blend in flour and salt until crumbly; press into 9"x 13" pan. Bake 10-15 min. until just lightly golden.

Directions
  1. Topping:
  2. 4-5 eggs
  3. 2 c. sugar
  4. 3/4 c. lemon juice
  5. 1/4 c. flour
  6. 3/4 tsp. baking powder
  7. 1/4 tsp. salt
  8. icing sugar
  9. Whisk together all but icing sugar. Pour over base. Bake 25-30 minutes, or until golden and set. Cool completely. Dust with icing sugar.
