Ultra Lemony Bars

Even people who don't like lemon like these squares. The somewhat sweet shortbread base is the perfect complement to the tartness of the lemon topping. A sprinkle of icing sugar adds that finishing touch.
Ingredients
- Base: shopping list
- ½ c. butter, softened shopping list
- 1 c. sugar shopping list
- 2 c. flour shopping list
- pinch salt shopping list
- Preheat oven to 350 degrees F. Beat butter with sugar until creamy. Blend in flour and salt until crumbly; press into 9"x 13" pan. Bake 10-15 min. until just lightly golden. shopping list
How to make it
- Topping:
- 4-5 eggs
- 2 c. sugar
- 3/4 c. lemon juice
- 1/4 c. flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- icing sugar
- Whisk together all but icing sugar. Pour over base. Bake 25-30 minutes, or until golden and set. Cool completely. Dust with icing sugar.
