Ingredients
  • 3 tsp. whole cloves
  • 3 tsp. broken cinnamon stick
  • 2 tsp. celery seed
  • 1/2 tsp. cayenne pepper
  • 2 c. white vinegar
  • 16 lb. ripe tomatoes
  • 1 med. onion, chopped
  • 2 c. sugar
  • 3 tbsp. salt
  • 1/2 tsp. garlic salt

Directions
  1. Measure spices in pan.
  2. Add vinegar; cover and bring to a boil.
  3. Remove pan from heat and let steep while preparing tomatoes.
  4. Wash and quarter tomatoes into pot.
  5. Add onion; bring to a boil.
  6. Cook 15 minutes, stirring occasionally.
  7. Run cooked tomatoes through colander to remove skins and seeds from pulp.
  8. Add sugar; bring to a boil and simmer until reduced about half.
  9. Strain vinegar-spice mixture into tomatoes, discarding spices.
  10. Add salt and garlic salt and simmer, stirring occasionally, until thick enough for catsup.
  11. Pour into hot sterilized jars and seal.
  12. Yield: 4-5 pints.
