How to make it

  • Measure spices in pan.
  • Add vinegar; cover and bring to a boil.
  • Remove pan from heat and let steep while preparing tomatoes.
  • Wash and quarter tomatoes into pot.
  • Add onion; bring to a boil.
  • Cook 15 minutes, stirring occasionally.
  • Run cooked tomatoes through colander to remove skins and seeds from pulp.
  • Add sugar; bring to a boil and simmer until reduced about half.
  • Strain vinegar-spice mixture into tomatoes, discarding spices.
  • Add salt and garlic salt and simmer, stirring occasionally, until thick enough for catsup.
  • Pour into hot sterilized jars and seal.
  • Yield: 4-5 pints.
