- 3 tsp. whole cloves shopping list
- 3 tsp. broken cinnamon stick shopping list
- 2 tsp. celery seed shopping list
- 1/2 tsp. cayenne pepper shopping list
- 2 c. white vinegar shopping list
- 16 lb. ripe tomatoes shopping list
- 1 med. onion, chopped shopping list
- 2 c. sugar shopping list
- 3 tbsp. salt shopping list
- 1/2 tsp. garlic salt shopping list
How to make it
- Measure spices in pan.
- Add vinegar; cover and bring to a boil.
- Remove pan from heat and let steep while preparing tomatoes.
- Wash and quarter tomatoes into pot.
- Add onion; bring to a boil.
- Cook 15 minutes, stirring occasionally.
- Run cooked tomatoes through colander to remove skins and seeds from pulp.
- Add sugar; bring to a boil and simmer until reduced about half.
- Strain vinegar-spice mixture into tomatoes, discarding spices.
- Add salt and garlic salt and simmer, stirring occasionally, until thick enough for catsup.
- Pour into hot sterilized jars and seal.
- Yield: 4-5 pints.
