This is the best apple crisp I've ever had... or made. Truly a gem of a recipe, that you can prepare ahead of time, and pop into the oven when everyone sits down to dinner, and will be ready to eat by the time tea is ready.

Ingredients
  • 3 lbs (8 cups) cooking apples (Granny Smiths are good)
  • 2 cups Brown Sugar
  • 2 cups Oatmeal
  • 2 cups Flour
  • 1 cup butter or margarine, melted
  • 4 tsp Cinnamon
  • 1 tsp Pumpkin Pie spice (or 1/2 tsp cinnamon and 1/2 tsp nutmeg)
  • lemon juice (optional)

Directions
  1. Preheat oven to 350 (or can be prepared ahead of time and baked later)
  2. Peel and slice apples into thin pieces, adding lemon juice as you go to prevent browning, place in mixing bowl
  3. Add 1 tsp cinnamon to apples, mixing apples until well coated in cinnamon
  4. In larger mixing bowl, place sugar, oatmeal and flour, remaining cinnamon, pumpkin spice (or cinnamon/nutmeg combo) and mix everything together
  5. Add melted butter
  6. Mix together until crumbly
  7. Spread half crumble mixture in bottom of large greased casserole dish
  8. Spread apples over layer of crumble
  9. Spread remaining crumble mixture over top of everything
  10. Bake at 350 for about 40 minutes
