Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup milk (low fat is fine)
  • melted butter, for brushing

Directions
  1. Preheat the oven to 425F.
  2. Grease a 6-cup muffin tin (or the middle 6 cups of a 12-cup tin) well with the melted butter and place in preheated oven for 1-2 minutes.
  3. In a large bowl, whisk together the eggs, milk and salt.
  4. Sift flour over mixture and whisk until smooth.
  5. Remove heated muffin tin from oven and divide the batter evenly into the buttered muffin cups.
  6. Bake for 20 minutes at 425F, then rotate the pan (to ensure even cooking) and reduce oven heat to 350F.
  7. Bake for an additional 10 minutes, until golden brown and crisp.
  8. Remove from pan and cool on a wire rack.

I used to make popovers when I was newly married because I thought they were easier to make than biscuits and rolls. Since then I have learned to make them all....thanks for the recipe and the memory.
