Energy Balls Recipe
This is a treat I originally made for my husband. They are filling, healthy and great to have around. I love to take these on hikes and camping. They go fast.

Ingredients
  • 1/4 lb pitted prunes
  • 1/4 lb pitted dates (ok, make sure they are pitted cause last time I nearly broke my food processor)
  • 1/4 lb dried apple slices
  • 1/4 lb raisins
  • 1/4 cup honey or agave syrup
  • 3 T fresh lemon juice
  • 3 T flax oil or coconut oil
  • 3/4 cup wheat or oat bran
  • 1/2 cup wheat germ
  • 1/4 cup ground flax seed
  • 2 T fresh grated orange rind (make sure to use organic oranges - if not available use 1 t orange extract)
  • 1 cup whey protein powder (plain unsweetened unflavored)
  • 1 cup fine unsweetened coconut flakes (macaroon sized)

Directions
  1. In a food processor fitted with a darn sharp blade pulse process everything but the coconut, adding the ingredients a bit at a time. If too sticky, add the bran early.
  2. You may have to do this in batches as this is a large recipe.
  3. When everything is in fine bits and not too moist put it all into a large bowl.
  4. With wet hands roll the mixture into golf ball sized spheres and roll in the fine coconut, pressing it well.
  5. Store in an air tight container in a cool place. Eat within two weeks.
