Pineapple Coconut Cake
- Time 35 minutes
- Serves 10
Ingredients
- 2 c sugar
- 1/2 c oil
- 2 eggs
- 2 1/2 c flour
- 2 t soda
- pinch salt
- 1 20oz can crushed pineapple with juice
- 1 t coconut extract
- 1 c chopped pecans
- Frosting:
- 1 3oz pkg cream cheese
- 1/4 c butter, softened
- 1 t coconut extract
- 1 1/2 c powdered sugar or till right consistency
- milk to consistency if needed
- plain or toasted coconut for decoration
How to make it
- Combine ingredients and beat 3 minutes. Pour into greased and floured 13x9" pan. Bake 350 degrees for 35 minutes or till tests done.
- Frost and sprinkle with coconut.
