How to make it

  • In a mixing bowl, stir together flour, sugar, baking powder, salt and baking soda.
  • Separately, combine milk, egg, oil, lime peel and 1/4 cup of lime juice and add to dry ingredients all at once; stir just until moistened.
  • Turn into a greased 9X5X3-inch loaf pan.
  • Bake in 350 degrees oven 1 hour
  • Cool in pan 10 minutes
  • Remove from pan onto rack
  • Combine the 2 tablespoons sugar and the 1 tablespoon lime juice.
  • Spoon over top of loaf
  • Cool completely
  • Wrap well and store overnight. Makes 1 loaf
