Ingredients

3 C. all-purpose flour

3/4 C. sugar

3 tsp.. baking powder

1 tsp. salt

1/4 tsp. baking soda

1-1/2 C. milk

1 beaten egg

1/4 C. cooking oil

1/4 C. lime juice

2 tsp. grated lime peel

2 Tbsp. sugar

1 Tbsp. lime juice

Directions

In a mixing bowl, stir together flour, sugar, baking powder, salt and baking soda.

Separately, combine milk, egg, oil, lime peel and 1/4 cup of lime juice and add to dry ingredients all at once; stir just until moistened.

Turn into a greased 9X5X3-inch loaf pan.

Bake in 350 degrees oven 1 hour

Cool in pan 10 minutes

Remove from pan onto rack

Combine the 2 tablespoons sugar and the 1 tablespoon lime juice.

Spoon over top of loaf

Cool completely

Wrap well and store overnight. Makes 1 loaf
