Hot & Sour soup is one of my favourite soups. This quick and easy recipe allows you to make it at home. Substitute the chicken with frozen peas and baby corn for a meatless meal.

Ingredients
  • 4 oz pork or chicken, sliced
  • 4 oz baby shrimp
  • 1 bean curd, diced
  • 2 oz of bamboo, julienned
  • 2 stalks green onion, sliced
  • 1/4 c sliced mushrooms
  • 1 carrot, juilienned
  • 4 c chicken stock
  • 1/2 c water
  • 1 tbsp rice wine
  • 1 tbsp soy sauce
  • 1 tsp white pepper
  • 1 tbsp vinegar
  • 1 tsp salt
  • 3 tbsp corn flour
  • 2 tsp hot chili oil
  • 1 egg, beaten
  • cilantros

Directions
  1. Bring the stock to a rolling boil, add the meat, bean curd, bamboo, carrot and mushrooms, simmer for 2 to 3 minutes.
  2. Add wine, soy sauce, pepper, vinegar, chili oil and salt.
  3. Next add the shrimp and egg. While soup is coming up to temperature, mix the cornstarch with a little cold water to make a smooth paste.
  4. Pour into the soup slowly, stirring all the time.
  5. Serve as soon as the soup thickens.
  6. Garnish with green onions and cilantros.
