Lentils And Spinach Or Greens Recipe

Ingredients
  • 2 c dried lentils
  • 6 c cold water or broth
  • 2 tbls red pepper flakes or to taste
  • 1 lb fresh spinach or greens, washed and drained
  • 2 tbls olive oil
  • 4 garlic cloves, minced
  • 1 tsp salt or to taste
  • 1 tsp ground allspice
  • 1 1/2 tsp ground cinnamon
  • 2 large onions, thinly sliced vertically
  • 3 c plain yogurt

Directions
  1. Put lentils, water, and half of the sliced onion in a medium stockpot and bring to a boil.
  2. Lower heat and simmer for 40 minutes.
  3. Fry other half of onions in 1 tbls oil in pan on stovetop until browned and somewhat crisp and set aside.
  4. Add more water if needed, enough to bring mixture to a boil again.
  5. Add the salt, spices, red pepper flakes, and spinach/greens.
  6. Cover and boil gently 6 - 7 minutes.
  7. Stir in the other tbls olive oil and serve with yogurt and fried onion on top.
