How to make it

  • In large saucepan, bring stock to a boil over high heat.
  • Stir in orzo; cook 10 minutes or until tender but firm.
  • Stir in spinach.
  • Bring to a boil and boil for 5 minutes.
  • Pour beaten egg into boiling soup, stirring constantly.
  • Sprinkle with Parmesan and serve immediately.

    Sounds similar to Italian Wedding Soup but without the meat. Good recipe! I will try!
