Cucumber Yogurt Dip

- Serves 15
- 2 seedless mini cucumbers
- 1 C plain yogurt, drained (fat-free, if you like)
- 1 C sour cream ( fat-free, if you like)
- 1 tsp lemon juice
- 1 tsp. chopped mixed herbs (parsley, dill,basil, mint., etc.)
- salt and pepper
How to make it
- Peel cucumbers and grate into a mixing bowl
- Add yogurt, sour cream, lemon juice and herbs and stir.
- Season to taste with salt and pepper
- Refrigerate 1 hour
- Great with pita chips, crackers, etc.
