  • MINI-MEATLOAVES:
  • 1 1/2 lbs (750 g) ground chicken or turkey
  • ***(you can also substitute extra-lean ground beef, but do not grease the muffin tins and drain off the fat before serving)
  • 1 can (10 oz / 284 ml) water chestnuts, drained & chopped
  • 3/4 cup (175 ml) fine dry bread crumbs
  • 2/3 cup (150 ml) canned, undiluted 2% evaporated milk (Carnation® brand, undiluted, 2% Evaporated Partly Skimmed Milk)
  • 1/4 cup (50 ml) soy sauce
  • 1/4 cup (50 ml) chopped green onions or scallions
  • 1 egg
  • 2 tsps (10 ml) chicken or beef bouillon mix (dry, powdered kind)
  • 1 clove garlic, minced
  • HONEY GARLIC SAUCE:
  • 1/2 cup (75 ml) ketchup
  • 1/3 cup (75 ml) honey
  • 2 TBSPS (30 ml) soy sauce
  • 1/2 tsp (2 ml) garlic powder

Directions
  1. Preheat oven to 350°F (180°C).
  2. TO MAKE THE MINI-MEATLOAVES, combine all the ingredients in a large bowl. Mix lightly but thoroughly (you don't want to over-work the meat or it will be tough).
  3. Divide the mixture among 12 large, lightly-greased muffin tins (cups). Press the meat firmly into the cups. Bake for 30 to 35 minutes, or until cooked. (Use an instant-read meat thermometer to make sure...)
  4. Remove the mini-meatloaves from the oven, and allow them to cool for about 5 minutes. (Drain any extra grease off them, if necessary.) Serve with the honey-garlic sauce.
  5. TO MAKE THE HONEY-GARLIC SAUCE, combine all the ingredeints in a small saucepan. Cook and stir over low heat until hot and bubbly, about 8 - 10 minutes. YEILDS: About 1 cup (250 ml).

I like mini meat loaves and this will be a nice change of pace from my usual prep. Thanks for the nice post. Kudos on the honey garlic sauce, that sounds perfectly yummy.


These do sounds good! I'd have to go low sodium on the soy sauce, but this is a really nice change of pace! Thanks for posting!
