I love this casserole. It tastes great and is an excellent way to use up leftover meat of any kind. Hope you like it too.

Ingredients
  • 1 large onion, sliced or diced
  • 1 green or red bell pepper, sliced or diced
  • 4 - 5 medium potatoes, peeled and sliced
  • 3 cups leftover cooked meat, sliced or diced
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1-1/2 cups 2% or Homogenized milk
  • 1 cup cheddar or Tex Mex cheese, shredded
  • fresh parsley for garnish

Directions
  1. In a greased baking dish, combine onion, potatoes and meat.
  2. In a small saucepan, melt margarine.
  3. Slowly add flour, salt, garlic and onion powder.
  4. Stir in milk and cheese.
  5. Over low heat, stirring constantly to blend together.
  6. Pour over meat and vegetables.
  7. Cover and bake in a preheated 300 degree F oven for 1 hour.
  8. Remove cover and bake an additional 10 minutes longer.
  9. Garnish with chopped parsley.
  10. Serves 4
