Taco Casserole Favourite Recipe

Ingredients

1 onion, chopped

2 garlic cloves, minced

1/2 - 1 tsp. chili powder

2-1/2 lbs. ground chuck or you can use ground turkey, chicken or pork

1 can of either re-fried beans or regular Pork n' Beans

2 packages of your favourite Taco Seasoning Mix

1 package tortillas, small (I like to use whole wheat tortillas)

1 8 oz. package shredded cheddar

1 8 oz. package shredded mozerella

Note: I use 16 oz. of Tex Mex cheese and add a little extra Mozerella

After removing from the oven I like to garnish with freshly chopped parsley and sliced ripe olives.

Directions

Saute onion in a small amount of olive oil

Add ground chuck, garlic and chili powder to onion and brown but do not over cook.

Drain away all the fat.

Add 1 cup warm water to the 2 packages of taco seasoning.

Spray a 13 x 9" baking dish with PAM.

Lay 1 tortilla on a flat surface and spread it with 2 to 3 tablespoons of meat mixture.

Roll up like you would a burrito.

Continue filling tortillas and rolling them up until the entire baking dish is filled.

If there is any meat mixture remaining, I like to mix in a jar or can of spaghetti sauce and spread the mixture over the top.

Sprinkle cheeses over the top of that and bake in a 375 degree oven for 30 minutes or until hot and bubbly.
