1 T chopped fresh oregano or 1 tsp dried leaf oregano
1/2 tsp salt
Dash of ground red pepper
Dash of black pepper
2 T red wine
2 cups plain yogurt
1 cup chopped red onion
1 cup chopped cucumber
1/4 cup chopped fresh mint or 1 1/2 T dried leaf mint
1 T chopped fresh marjoram or 1 tsp dried leaf marjoram
How to make it
Prepare Yogurt Sauce:
Combine Yogurt Sauce ingredients in small bowl. Cover; chill up to 4 hours before ready to serve.
For the burgers:
Soak 4 bamboo skewers in water. Combine meat, seasonings and wine in medium bowl; mix lightly. Divide mixture into eight equal portions; form each portion into an oval, each about 4 inches long. Cover; chill 30 minutes.
Preheat grill. Insert skewers lengthwise through centers of ovals, placing 2 on each skewer. Grill about 8 minutes or to desired doneness, turning once. Fill pita bread with lettuce, meat and chopped tomatoes. Serve with Yogurt Sauce. (Try a small squeeze of lemon or even lime in your yogurt sauce!)
