I happen to LOVE butter tarts and this is my favorite recipe. Hope you enjoy them.

  • Pastry:
  • 1-1/3 cups (325 mL) All-purpose flour
  • 1/4 tsp. (1 mL) salt
  • 1/2 cup (125 mL) butter or margarine
  • 3 Tbsp. (45 mL) ice water
  • 1 tsp. (5 mL) white vinegar
  • Filling:
  • 1/2 cup (125 mL) corn syrup
  • 1/4 cup (50 mL) brown sugar
  • 1 egg (I prefer Omega-3 eggs)
  • 2 Tbsp. (30 mL) butter or margarine, melted
  • 1 tsp. (5 mL) each vanilla and white vinegar
  • 1/2 cup (125 mL) raisins, preferably sultanas
  • Note: I sometimes add a few chopped walnuts or pecans to my butter tarts.

Directions
  1. Preheat oven to 375 F (190 C)
  2. Spray using non-stick cooking spray, 10 preferably non-stick, muffin tin cups.
  3. In a medium bowl, blend flour with salt.
  4. Using your finger tips or pastry cutter, mix in butter/margarine just until large crumbs begin to form.
  5. Whisk water with vinegar.
  6. While stirring flour mixture with a fork, gradually add just enough water mixture for dough to come together.
  7. Gather into a ball and place on a large piece of plastic wrap.
  8. Fold plastic wrap over top, then use plastic to flatten dough into a disc.
  9. Seal with plastic wrap and refrigerate at least 30 minutes.
  10. Meanwhile, whisk corn syrup with brown sugar, egg, butter/margarine, vanilla and vinegar.
  11. Dough is easiest to roll between two sheets of plastic wrap.
  12. Roll dough no thicker than 1/4 inch (0.5 cm) thick.
  13. Then cut out 10 (4 inch / 10 cm) circles, using a lightly floured glass or circle cutter.
  14. Press circles into muffin cups.
  15. Divide raisins among tart shells.
  16. Then fill with corn syrup mixture.
  17. Bake until a deep golden, 22 - 25 minutes.
  18. Let stand a couple of minutes.
  19. Then remove to a rack to cool completely.

I've been baking butter tarts for years and your recipe is almost identical to the one I use. I know how good they are and your recipe deserves "5" forks.
