I love this recipe and it's very popular in my family.

Ingredients
  • 1-1/2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cornmeal
  • 2 eggs, beaten
  • 1 cup milk
  • 3 Tbsp. melted butter
  • Note: If you want to add some zip to your muffins, a dash of Tobasco sauce is a nice addition.

Directions
  1. Preheat oven to 425 degrees F.
  2. Sift together flour, baking powder, and salt.
  3. Add cornmeal.
  4. In a separate bowl combine eggs, milk, and butter and whisk.
  5. Slowly add wet ingredients to dry, stirring until blended.
  6. Spoon mixture into greased muffin pans and bake 25 to 30 minutes.
