How to make it

  • Put orange juice and dried peach into blender or food processor. Process until smooth.
  • Add peaches with juice and yogurt. Process until smooth. Spread half of peach mixture evenly in plastic wrap-lined 9 x 5 x 3 inch loaf pan. Freeze for about 3 hours until firm. Chill remaining peach mixture.
  • Spread ice cream evenly over frozen peach mixture. Stir remaining peach mixture. Spread evenly over ice cream. Freeze, covered for at least 6 hours or overnight. Invert onto cutting board. Discard plastic wrap. Cuts into 8 slices.
