Ingredients
  • 8 - 10 ounces (2-1/2 cups) shell pasta, medium sized
  • 1 (8-ounce) carton plain yogurt (1 cup) - nonfat can be used as well.
  • 1/2 cup mayonnaise
  • Note: I like to add about 1 Tsp. of either lemon juice or dill pickle juice to thin the yogurt and mayonnaise.
  • 2 Tbsp. Dijon or spicy brown mustard (optional)
  • 2 Tbsp. salt-free herb seasoning, ie. Mrs. Dash
  • 1-1/2 cups celery, chopped
  • 1 dill pickle, chopped
  • 1/4 cup green olives, sliced
  • 1 cup green onion, sliced
  • 1 pound small to medium shrimp or crab, cooked
  • 3 cups coarsely chopped tomatoes (about 3 large)
  • This is optional but I also like to add a handful of Feta cheese.
  • Note: I have also used cherry tomatoes or grape tomatoes cut in half.
  • Fresh chopped parsley to garnish.

Directions
  1. Cook pasta according to package directions.
  2. Drain and cool.
  3. In a large bowl, stir together yogurt, mayonnaise, mustard, lemon / dill pickle juice and herb seasoning.
  4. Add pasta, celery, dill pickle, green onions, green olives and mix well.
  5. Chill at least 2-3 hours.
  6. Just before serving, stir in shrimp or crab and tomatoes.
  7. Garnish with fresh chopped parsley.
  8. Makes approximately 4 (3/4 cup) servings.
