Nacho Beer Beans Recipe
These simmered semi-homemade beans are great on nachos or served with rice as a main dish. These are a staple at my house. Am'ts are approximate. You can't mess these up.

Ingredients
  • 1 bottle Samuel Adams Ale - just to cover the beans, not quite 1 bottle
  • 2 Tbsp. olive oil
  • 1 large onion
  • 2 cloves garlic
  • 2 cans beans, mix them up, 2 different kinds, ie: black & pink - drained and washed
  • fresh basil
  • cumin about 1 tsp
  • ketchup about 3 Tbsp.
  • 2-3 Tbsp. molasses
  • paprika about 1 tsp.
  • veggie soup base 1 tsp.

Directions
  1. In a medium pot, saute garlic and onion in the oil until the onion is clear.
  2. Add the drained beans.
  3. Add fresh basil, cummin, ketchup, molasses, paprika and bouillon or soup base.
  4. Cover with the beer until slightly covered.
  5. Do not cover, simmer for 35 minutes. If it dries up too much, add more of the beer.
  6. *great served with a salad of romaine, orange slices and greek olives.
