Upside-down Cake Recipe
This recipe for Pineapple Upside-down cake is so easy and so pretty served to company or family. I have also used fresh peaches, plums, apricots and mangos in this recipe.

Ingredients
  • 1/4 cup butter
  • 1 cup firmly packed brown sugar
  • 3/4 cup chopped pecans
  • 20-ounce can of pineapple slices, drain and reserve 5 tablespoons of juice
  • 3 eggs, separated
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • maraschino cherries
  • Note: I always like to have some freshly whipped cream on hand for those who aren't counting their calories ;)

Directions
  1. Preheat oven to 350°F.
  2. Melt butter in a 9-inch cast iron skillet.
  3. Add brown sugar and pecans.
  4. Stir well to thoroughly combine, then turn off the heat -- don't cook it.
  5. Arrange 8 pineapple slices in a single layer over the brown sugar and pecan mixture (your 9-inch skillet should accommodate 8 slices without overlapping).
  6. Set the skillet aside.
  7. Combine flour, baking powder and salt in a bowl; set aside.
  8. Beat egg yolks at medium speed until they are thick and lemon colored. Gradually add granulated sugar and continue beating.
  9. Add the flour mixture to the yolk mixture, and stir in the reserved pineapple juice.
  10. Beat the egg whites until stiff peaks form.
  11. Fold the whites into the cake batter.
  12. Pour or spoon the batter evenly over the pineapple slices.
  13. Bake at 350°F for 40 to 45 minutes.
  14. Cool the cake in the skillet for 30 minutes, then invert it onto a serving plate.
  15. Place a maraschino cherry in the center of each pineapple ring.
  16. Note: If y'all are using fresh fruits, I suggest using 5 tablespoons of apple juice to replace the pineapple juice that has been drained and reserved.

This is almost the same way I make Pineapple Upside-down cake. I know it tastes good and my family and I enjoy this year round. I'm giving this recipe 5 forks.
