  • Bottom layer :
  • 2 eggs ,separated
  • 3 tbsp icing sugar
  • 3/4 C cream
  • 60 g almonds , flaked
  • ............................................
  • Middle Layer :
  • 125 g chocolate , chopped
  • 1 tbsp cocoa pwd
  • 2 eggs
  • 3 tbsp icing sugar
  • 3/4 C cream
  • ...............................................
  • Top Layer :
  • 3 tbsp icing sugar
  • 2 eggs
  • 1 C cream
  • 25 g chopped preserved ginger
  • 50 g halved glaced cherries
  • 200 g mixed glaced fruits
  • 1 tsp vanilla essence
  • .....................................................

Directions
  1. Line a 20 cm square tin .

  3. Bottom Layer :
  4. Beat egg whites until peaks form .
  5. Add icing sugar , beat and keep aside .
  6. Whip the cream and fold into the whites along with the egg yolks .
  7. Stir the almond flakes and pour into the tin .
  8. Freeze 60 mins .

  10. Middle Layer :
  11. Melt the chocolate in a double boiler .
  12. Add cocoa and stir .
  13. Cool abit .
  14. Beat egg whites until peaks form .
  15. Add icing sugar , beat and keep aside .
  16. Whip the cream and fold into the whites along with the egg yolks .
  17. Pour over bottom layer , level it and chill for 60 mins .

  19. Top Layer :
  20. Beat egg whites until peaks form .
  21. Add icing sugar , beat and keep aside .
  22. Whip the cream and fold into the whites along with the egg yolks .
  23. Stir in the fruits and essence .
  24. Pour over the middle layer and level it .

  26. Freeze overnight .
  27. Slice and serve / or wrap in the foil and put in freezer .
