- Bottom layer : shopping list
- 2 eggs ,separated shopping list
- 3 tbsp icing sugar shopping list
- 3/4 C cream shopping list
- 60 g almonds , flaked shopping list

- Middle Layer : shopping list
- 125 g chocolate , chopped shopping list
- 1 tbsp cocoa pwd shopping list
- 2 eggs shopping list
- 3 tbsp icing sugar shopping list
- 3/4 C cream shopping list
- ............................................... shopping list
- Top Layer : shopping list
- 3 tbsp icing sugar shopping list
- 2 eggs shopping list
- 1 C cream shopping list
- 25 g chopped preserved ginger shopping list
- 50 g halved glaced cherries shopping list
- 200 g mixed glaced fruits shopping list
- 1 tsp vanilla essence shopping list

How to make it
- Line a 20 cm square tin .

- Bottom Layer :
- Beat egg whites until peaks form .
- Add icing sugar , beat and keep aside .
- Whip the cream and fold into the whites along with the egg yolks .
- Stir the almond flakes and pour into the tin .
- Freeze 60 mins .

- Middle Layer :
- Melt the chocolate in a double boiler .
- Add cocoa and stir .
- Cool abit .
- Beat egg whites until peaks form .
- Add icing sugar , beat and keep aside .
- Whip the cream and fold into the whites along with the egg yolks .
- Pour over bottom layer , level it and chill for 60 mins .

- Top Layer :
- Beat egg whites until peaks form .
- Add icing sugar , beat and keep aside .
- Whip the cream and fold into the whites along with the egg yolks .
- Stir in the fruits and essence .
- Pour over the middle layer and level it .

- Freeze overnight .
- Slice and serve / or wrap in the foil and put in freezer .
