Almost Jam Slice Recipe

Ingredients

100g butter

1/4 cup sugar

2 eggs

11/2 cups plain flour

good pinch baking power

1/2 cup raspberry jam

1/2 sugar

1/2 coconut

Directions

melt butter in bowl large enough for 1st 5 ingredients. Stir first mesure of sugar, separe eggs and add yolks to bowl. Mix until combind. Add sifted flour and baking power. Mix.

Spred into a 20x20 tin, ten spread jam on top.

Beat egg whites until stiff. Mix in remaining sugar and coconut. Spread over the jam.

Bake @ 180∘C until golden, around 20 min. Cut into squares while warm
