Ingredients
  • 2 medium sweet (Vidalia or Walla Walla) onions, sliced thin
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 c. milk
  • 6 eggs
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 tsp. grated nutmeg

Directions
  1. Preheat oven to 425.
  2. Fry the onions in the butter, cook until soft.
  3. Add the flour and mix to thicken.
  4. Add milk, salt, pepper, nutmeg, and bring to a boil, stirring constantly.
  5. Reduce heat to keep warm.
  6. Separate the eggs.
  7. Beat the egg yolks until creamy, and stir into the milk mix.
  8. Remove from heat.
  9. Beat the egg whites until stiff, and fold in.
  10. Pour into a baking dish or casserole and bake for 15 minutes.
  11. Serve immediately.
