Ingredients
  • 2 cups of milk
  • 2 tablespoons of sugar
  • 1/2 tsp of vanilla
  • 2 teaspoons of rennet, or 1/2 junket tablet
  • 2 teaspoons of lukewarm water

Directions
  1. Heat milk to lukewarm (90 degrees F.) in double boiler.
  2. Add sugar and flavoring, and stir until sugar is dissolved.
  3. Add rennet dissolved in water and pour into dish from which the custard is to be served.
  4. Let stand until cool and firm.
  5. Serve with cream, soft custard, fruit or fruit syrup.
  6. Cinnamon, nutmeg, coconut, chocolate or cocoa or other flavoring may be substituted for the vanilla.
  7. I'm thinking this is the precursor to a pannacotta?
