Ingredients
  • ca. 100 gr. basmati rice (I always use a 110 gr. bag)
  • 1 filet haddock (or any white fish)
  • salt
  • lemonpepper
  • 2-3 tomatos
  • 1 small tub cream cheese w/pepper
  • ca. 1/8 l. cream, milk or skimmed milk (does not make a lot of difference to the flavour)
  • Gratin cheese
  • small pan
  • Ovenproof dish

Directions
  1. Boil the rice, then drain and cover the bottom of the ovenproof dish with it.
  2. Cut the fish into 4 equal portions and place on top of the rice.
  3. Season with salt.
  4. Slice tomatos and place on top of the dish.
  5. Season with lemonpepper.
  6. Mix together the cream cheese and cream/milk in the small pan on low heat and then pour the mix evenly over the dish.
  7. Finish by spreading gratin cheese over the top and put in the oven.
  8. Bake at 180-200 c for 20-30 mins.
  9. Good on its own or with hot buttered toast.
