Easy cake to prepare and it's great when you want something sweet, tasty n' bananay ;)

Ingredients
- 1/2 cup butter or margarine
- 6 tsp. brown sugar
- 2 eggs, slightly beaten
- 5 - 3 oz. bananas, mashed
- 2 cups flour
- 1/2 tsp. baking soda
- a dash of cinnamon is optional
- 1/4 tsp. salt
- 1 cup milk, 2% or homogenized
- 1 tsp. vanilla extract
Directions
- Cream butter or margarine.
- Gradually add brown sugar and continue to beat.
- Add eggs and beat thoroughly.
- Add mashed bananas and flavoring.
- Sift dry ingredients together and add to butter mixture alternately with milk.
- Bake at 350 degrees in an 8 or 9 inch cake pan for 25 to 30 minutes.
- I like to make either a thin confectioners' sugar icing or a decadent cream cheese icing for this cake.
- *Cream Cheese Frosting:
- 1/2 stick butter, softened
- 8 oz. cream cheese, softened
- 1 box powdered sugar (1 lb.)
- 2 tsp. vanilla extract
- I usually add 1 tsp. of boiling hot water to the above and beat until creamy smooth.

Sounds great! I love banana cake. I have two recipes I use, one that my mother always made with chocolate frosting, and the other that I made with cream cheese frosting. Never had brown sugar or cinnamon in my banana cake, but it sounds like a wonderful idea! I will have to try this one!
