Easy Stir Fried Spinach Recipe

A quick, Asian-ish inspired spinach side dish.

Ingredients
- 1lb fresh baby spinach
- 1 leek, diagonally sliced in 1inch pieces
- 2 cloves garlic
- 1 small can water chestnuts, sliced
- 3oz roasted red pepper, sliced
- 1T soy sauce
- squirt of fresh lime juice
- red pepper flakes and black pepper to taste
- about 2T peanut oil
Directions
- Heat oil, soy sauce, red pepper flakes and lime juice in wok or large stir fry pan.
- Add garlic and leek and cook until just tender, about 1-2 minutes
- Add spinach, water chestnuts and roasted red pepper, stir fry another couple of minutes until spinach is tender.
- Toss with another squirt of lime juice and black pepper before serving.

Although I didn't have all the ingredients I did have the basic. I subbed turnip greens for the spinach and it was a success! What a wonderful heat! Dear hubby appreciated this dish so much...THANK YOU KENI!
